Ingredients

  • 0.5 potato (medium to large, boiled until fork tender)
  • 1 tbsp egg (beaten)
  • 0.33 cup all purpose flour (plus more for dusting; use up to 1/2 cup until desired tenderness is reached)
  • salt (a pinch for boiling water)

Steps

  1. 1

Boil the potato in water with a pinch of salt until the potato is fork tender.

  2. 2

Let the potato cool slightly, then push it through either a potato ricer or a fine-mesh strainer onto a floured surface to ensure a smooth texture.

  3. 3

Make a well in the center of the mashed potato and add the 1 tablespoon of egg.

  4. 4

Dust more flour over the potato and egg and begin to mix.

  5. 5

Slowly add more flour and continue mixing until the dough reaches a soft and firm texture; it should no longer be sticky.

  6. 6

Roll the dough into long strips to your desired thickness.

  7. 7

Cut the strips into 1/2 inch cubes.

  8. 8

If desired, roll each gnocchi piece over the back of a fork to create traditional ridges.

Notes

If you don't have a potato ricer, a fine-mesh strainer works perfectly to get the smooth consistency needed for gnocchi. The amount of flour needed can vary based on the moisture content of the potato, so add it gradually until the dough is manageable but not tough.
