- 200 g Smoked tofu (Cut into bite-size cubes or strips)
- 1 large Sweet potato (Cut into small cubes or wedges)
- 250 g Mushrooms (Sliced or torn into pieces)
- 1 small Onion (Finely diced)
- 2 clove Garlic (Minced)
- 1 tbsp Fresh ginger (Finely grated)
- 2 tbsp Soy sauce or tamari (Use tamari for a gluten-free bowl)
- 1 tsp Smoked paprika
- 1 tsp Ground cumin
- 2 tbsp Cooking oil (Divided between roasting and frying)
- Salt (To taste; account for the salt in the soy sauce)
- Black pepper (To taste)

Preheat the oven to 220°C/425°F. Line a baking tray with parchment or lightly oil it.

Add the cubed sweet potato to the tray. Toss with about half of the cooking oil, a pinch of salt, and black pepper, then spread it out in a single layer so the pieces roast rather than steam.

Roast the sweet potato for about 18–20 minutes, turning once, until tender in the center and browned at the edges.

While the sweet potato roasts, warm a large skillet or saucepan over medium heat and add a small amount of the remaining oil.

Add the diced onion and cook for 3–4 minutes, stirring occasionally, until softened and lightly golden.

Add the minced garlic and grated ginger. Stir for about 30 seconds, until fragrant but not browned.

Add the smoked paprika and ground cumin. Stir briefly to toast the spices and coat the aromatics.

Add the cooked azuki beans and soy sauce or tamari. Stir well and cook over medium-low heat for 5–8 minutes, allowing the beans to warm through and absorb the aromatics. If the mixture looks dry, add a small splash of water.

Meanwhile, heat a separate skillet over medium-high heat and add a little of the remaining oil. Add the mushrooms in a single layer and cook for 5–7 minutes, stirring occasionally, until their moisture has evaporated and they are browned and crisp at the edges.

Add the smoked tofu to the mushroom skillet. Fry for several minutes, turning the pieces, until the tofu is hot and golden or crisp on the outside.

Taste the azuki beans and adjust the seasoning with additional soy sauce, salt, pepper, or spices as needed. The beans should be soft, savory, aromatic, and lightly saucy rather than soupy.

Divide the seasoned azuki beans between two bowls. Top with the roasted sweet potato, browned mushrooms, and fried smoked tofu, then serve immediately.
