Ingredients
- 2 aubergines (Whole, roasted until very soft)
- 3 tbsp olive oil (For roasting and frying)
- 3 cloves garlic (Finely chopped or minced)
- 250 g cherry tomatoes (Halved)

Preheat the oven to 220°C/425°F. Place the whole aubergines on a baking tray, prick them a few times with a knife, and rub them with some of the olive oil. Roast for about 35–45 minutes, turning once, until the skins are collapsed and the flesh is completely soft.

Remove the roasted aubergines from the oven and leave them until cool enough to handle. Split them open, scoop the soft flesh from the skins, and roughly mash it with a fork. Discard the skins.

Heat the remaining olive oil in a large, deep frying pan or saucepan over medium heat. Add the garlic and cook for about 30 seconds, stirring, until fragrant but not browned.

Add the halved cherry tomatoes and chopped fresh herbs. Cook for 4–6 minutes, stirring occasionally, until the tomatoes soften and begin to release their juices.

Add the tomato purée and stir it into the softened tomatoes and garlic. Cook for about 1 minute so the purée darkens slightly and loses its raw taste.
