Ingredients
- 3 large eggs
- 1 tbsp butter
- 2 tbsp green onions (chopped; divided)
- 0.5 tsp crushed red pepper flakes
- 0.25 tsp garlic powder
- salt (to taste, for the eggs)
- black pepper (to taste, for the eggs)
- 1 everything bagel (sliced in half)
- 1 slice cheddar cheese
- 1 slice mozzarella cheese
- 0.333 avocado (thinly sliced)
- 1 tbsp sun-dried tomatoes (chopped)
- fresh spinach (small handful)
- 1 slice tomato
- salt (to taste, for the vegetables)
- black pepper (to taste, for the vegetables)
- 0.5 tsp black sesame seeds
Steps
- 1
Crack the eggs into a bowl and whisk until smooth. Add salt, black pepper, crushed red pepper flakes, and garlic powder.
- 2
Lightly toast the bagel halves until slightly crisp, but not overly toasted because they will return to the pan later.
- 3
Heat a large nonstick skillet over medium-low heat and melt the butter.
- 4
Pour the beaten eggs into the skillet, top with the chopped green onions, and immediately swirl the pan so the eggs spread into a thin, even layer.
- 5
While the egg is still slightly wet on top, place both bagel halves cut-side down onto the egg, leaving a little space between them. Gently press them into the egg so the egg adheres to the cut sides.
- 6
Cook for about 1–2 minutes, until the egg is mostly set and golden underneath.
- 7
Carefully flip the egg-and-bagel combination so the egg side faces up. If any egg hangs outside the bagel, fold it inward over the bagel edges to create a crispy egg seal around the bagel.
- 8
Place the cheddar and mozzarella slices on one bagel half.
- 9
Add the chopped sun-dried tomatoes, spinach, avocado, and tomato slice. Season the vegetables lightly with salt and black pepper.
- 10
Sprinkle the black sesame seeds over the assembled filling.
- 11
Close the bagel and reduce the heat to low. Cover the pan with a lid and cook for 1–2 minutes, flipping once if needed, until the cheese is melted and the outside is golden and crisp.
- 12
Cut the bagel in half and serve immediately while the cheese is gooey and the egg is crispy.
Notes
The source lists the green onions as divided but only explicitly directs adding them to the eggs; the distribution of any remainder is not specified.
