A simple and delicious chicken pasta dish where everything, including the pasta, is cooked in a single pan for maximum flavor and minimal cleanup.

Ingredients

  • 2 chicken breasts (diced)
  • 3 cloves garlic (minced)
  • 1 tsp chilli paste (optional)
  • 2 tsp oregano
  • 400 g tinned tomatoes (1 tin)
  • 1 tbsp tomato paste
  • 2 tsp balsamic vinegar
  • 500 ml chicken stock
  • 250 g fusilli
  • 20 g fresh basil leaves (torn)
  • 80 g mascarpone
  • parmesan cheese (grated, for serving)

Steps

    In a large pan, cook the diced chicken breasts until there are no more pink bits visible.

    Add the minced garlic, chili paste (if using), and oregano to the pan. Cook for about 1 minute until fragrant.

    Pour in the tinned tomatoes, tomato paste, chicken stock, and balsamic vinegar.

    Bring the mixture to a boil.

    Add the fusilli pasta directly into the pan.

    Cook for approximately 12 minutes, stirring often, until the pasta is tender and has absorbed most of the sauce.

    Stir in the mascarpone and torn fresh basil leaves.

    Mix well until the sauce is super creamy and glossy.

    Dish it up and finish by grating some fresh parmesan over the top.

Notes

Stirring the pasta frequently is important in one-pot recipes to prevent the pasta from sticking to the bottom and to help release starches for a creamier sauce.
