Ingredients

  • 1.5 lb boneless, skinless chicken breasts
  • 1 lb red baby potatoes (halved or quartered if large)
  • 1 lb fresh green beans (trimmed)
  • 0.25 cup olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 0.25 tsp black pepper

Steps

    Place the chicken breasts in the center of a 6-quart slow cooker.

    Add the halved red potatoes to one side of the chicken.

    Add the trimmed fresh green beans to the other side of the chicken.

    In a small bowl, whisk together the olive oil, lemon juice, dried oregano, garlic powder, onion powder, salt, and pepper.

    Drizzle the seasoning mixture evenly over the chicken, potatoes, and green beans.

    Cover and cook on High for 4 hours or on Low for 7-8 hours, until the chicken is cooked through and the potatoes are tender.

Notes

For best results, use fresh green beans rather than canned or frozen to maintain texture during the long cook time. If using very large chicken breasts, consider slicing them into smaller cutlets for even cooking.
