Rosemary Honey Mustard Breakfast Sandwiches

Ingredients
- 10 Eggs (pasture-raised recommended)
- 10 English muffins (sourdough recommended)
- 2 tbsp Butter (for spreading on muffins)
- 2 lb Ground turkey
- 0.333 cup Honey
- 2 tbsp Dijon mustard
- 1 tbsp Fresh rosemary (chopped)
- 1 tsp Onion powder
- 0.5 tsp Garlic powder
- 0.5 tsp Smoked paprika
- 1 tsp Salt (for sausage mixture)
- 10 slices Colby jack cheese
- Salt & pepper (to taste)
- Olive oil (for coating the pan)

Preheat your oven to 350°F (175°C).

Grease a medium baking sheet and crack the 10 eggs directly onto it.

Bake the eggs for 10-12 minutes or until the whites are fully cooked. Once finished, use the bottom of a cup to cut the eggs into circles. You can add the scraps to the sandwiches or save them for later.

Halve your English muffins and spread butter on each side.

Bake the muffins for 6-8 minutes until they are just lightly toasted.

In a large bowl, combine the ground turkey, honey, Dijon mustard, chopped rosemary, onion powder, garlic powder, smoked paprika, and 1 teaspoon of salt.

Mix the sausage ingredients together until everything is just combined, taking care not to over-mix the meat.

Heat a large skillet over medium heat and coat the bottom of the pan with olive oil.

Form the turkey mixture into 1/2-inch thick patties that are roughly the width of your English muffins, keeping in mind they will shrink slightly during cooking.

Add the patties to the pan and cook for 4-5 minutes on each side until fully cooked through.

Assemble your sandwiches by placing a slice of Colby Jack cheese onto one half of an English muffin, followed by a turkey sausage patty, a circular egg piece, and the remaining muffin half.
Notes
STORAGE: Wrap sandwiches in parchment paper and place in freezer-safe bags. REHEATING: For best results, thaw in the fridge overnight, unwrap, and bake at 400°F for 10 minutes. To reheat from frozen, bake for approximately 25 minutes. A sprinkle of water on the sandwiches before reheating can help prevent them from drying out.
