High Protein Oreo Crumble Overnight Oats

Ingredients
- 0.5 cup Gluten free oats (certified gluten free)
- 0.5 cup Almond milk
- 1 tsp Chia seeds
- 0.5 scoop Cookies and Cream protein powder (PEScience brand recommended; can sub for Gourmet Vanilla)
- 1 tbsp Maple syrup (optional, for the oat layer)
- 0.33 cup Greek yogurt
- 1.5 tbsp Cocoa powder
- 1 tsp Maple syrup (for the chocolate layer)
- 1.5 tbsp Cream cheese (optional, gives a cheesecake flavor)
- 2 Oreo cookies (crushed into pieces)

Add the oats, almond milk, chia seeds, protein powder, and optional maple syrup to a bowl or jar.

Stir the oat mixture well to ensure the protein powder is fully incorporated and there are no dry clumps.

Place the oat mixture in the refrigerator to set for a minimum of 2 hours.

In a separate small bowl, mix together the Greek yogurt, cocoa powder, 1 teaspoon of maple syrup, and optional cream cheese until smooth and thick.

Once the oats have set for at least 2 hours, remove them from the refrigerator.

Spread the chocolate yogurt mixture in an even layer over the top of the oats.

Top the chocolate layer with crushed Oreo pieces.

Return the jar to the refrigerator and let it sit overnight to fully set and allow the flavors to meld.

Notes
The maple syrup in the oat layer is optional if your protein powder is already sweet. Adding the cream cheese to the chocolate layer is highly recommended for a cheesecake-like texture.
