Banana Ogura Cake

- 5 egg yolks (separated from 5 eggs)
- 1 egg (whole)
- 160 g ripe banana (blended until smooth; about 2 bananas)
- 0.25 tsp salt
- 50 g neutral oil
- 80 g plain flour (sifted)
- 5 egg whites (separated from 5 eggs)
- 0.25 tsp cream of tartar
- 65 g caster sugar

Preheat oven to 145°C (293°F) with top and bottom heat.

Blend the ripe bananas until completely smooth to ensure a smooth batter.

Separate 5 eggs. In a large bowl, combine the 5 egg yolks with 1 whole egg and whisk together.

Add the neutral oil, blended bananas, and salt to the yolk mixture. Whisk until well combined.

Add the sifted plain flour to the yolk mixture and mix until the batter is smooth.

In a separate clean bowl, whisk the 5 egg whites and cream of tartar until foamy.

Gradually add the caster sugar to the egg whites while continuing to whisk until firm peaks form.

Fold one-third of the meringue into the yolk mixture to lighten it.

Pour the lightened yolk mixture back into the remaining meringue and gently fold until fully combined, ensuring there are no visible white streaks.

Pour the batter into an 8-inch round baking tin. Tap the tin lightly on the counter and run a skewer through the batter to remove any large air bubbles.

Place the baking tin in a larger tray and fill the tray with hot water until it reaches about 1.5cm high to create a water bath.

Bake for 70 minutes.

Remove the cake from the water bath and tap the tin gently on the counter.

Invert the cake for 5–10 minutes to minimize shrinkage.

Let the cake cool slightly before slicing and serving.
Notes
The author suggests that the cake tastes even better the next day when served cold from the fridge. Avoid using a springform tin as the water bath might leak in. If you don't have cream of tartar, lemon juice or white vinegar is a common substitute in similar recipes.
