Ingredients
- 1 purple sweet potato (medium, cubed)
- 6 oz steak (such as sirloin or ribeye)
- 2 eggs (large)
- 0.5 avocado (diced)
- 1 tomato (small, diced)
- 2 tbsp red onion (finely diced)
- 1 cup mixed greens (for the salad base)
- 1 tbsp olive oil (divided for roasting and searing)
- salt and pepper (to taste)

Preheat your oven to 400°F (200°C). Peel and cube the purple sweet potato into bite-sized pieces.

Toss the sweet potato cubes with a drizzle of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized.

Season the steak generously with salt and pepper on both sides. Heat a skillet over medium-high heat with a small amount of oil.

Sear the steak for 3-5 minutes per side, depending on thickness and desired level of doneness. Remove from the pan and let it rest for 5 minutes before slicing.

In the same skillet (or a separate one), fry the eggs to your preference (sunny-side up or over-easy recommended).

While the steak rests, prepare the fresh mix by combining the diced avocado, tomato, and red onion in a small bowl. Season with a pinch of salt.

Assemble the bowl by placing a bed of mixed greens at the bottom. Arrange the roasted purple sweet potatoes, sliced steak, and fried eggs on top.

Notes
Purple sweet potatoes are higher in antioxidants than regular sweet potatoes, making them excellent for reducing inflammation after a workout. For extra flavor, add a squeeze of lime juice over the avocado mix.
