Ingredients

  • 3 Potatoes (medium, cut with skin on)
  • 1 tbsp Olive oil (for the potatoes)
  • 1 tsp Paprika (to taste)
  • 0.5 tsp Garlic powder (to season the potatoes)
  • 2 Chicken sausage (artisanal, sliced)
  • 250 g Beef (cut into cubes or strips)
  • 1 tsp Vegetable oil (to sear the meat)
  • 0.5 cup Greek yogurt (unsweetened)
  • 1 Avocado (divided for the sauce and the topping)
  • 0.25 cup Fresh cilantro (chopped)
  • 1 clove Garlic (for the sauce)
  • 1 Lime (the juice)
  • 0.25 cup Red onion (chopped for the pico de gallo and sauce)
  • 1 Tomato (chopped for the pico de gallo)
  • 2 tbsp Suero costeño (as artisanal as possible)
  • Salt and pepper (to taste)

Steps

    Cut the unpeeled potatoes into sticks.

    In a bowl, toss the potatoes with olive oil, paprika, and garlic powder until well coated.

    Place the potatoes in the air fryer at 200°C (400°F) for 23 minutes (1380 seconds) until crispy.

    Slice the artisanal chicken sausages and air fry them for 5 minutes.

    In a skillet with a little very hot oil, sear the pre-chopped beef to lock in its juices and keep it tender. Season with salt and pepper to taste.

    To prepare the fit sauce, place the Greek yogurt, part of the avocado, cilantro, garlic, a bit of onion, lime juice, salt, and pepper in a blender. Blend until a creamy consistency is reached.

    Prepare a pico de gallo by mixing the chopped tomato, onion, cilantro, and lime juice.

    To assemble the dish, create a base with the fries, then add the meat and sausages.

    Generously drizzle with the fit yogurt sauce and serve with suero costeño, the remaining avocado, and the pico de gallo.

Notes

It is recommended to use suero costeño and artisanal chicken sausages to maintain the healthy profile of the recipe. The time of 1380 seconds is approximately equivalent to 23 minutes in the air fryer.
