Easy Tiramisu in a Glass
A quick, egg-free Italian dessert that layers mascarpone-ricotta cream with coffee-dipped chocolate biscuits and decadent Nutella. Perfect for a fast yet elegant dinner date treat.

Ingredients
- 250 g Mascarpone (mixed well)
- 150 g Ricotta
- Vanilla essence (a touch)
- 2 tbsp Sugar
- 2 cup Weak espresso coffee (chilled)
- 1 pack Pan di Stelle chocolate biscuits
- Nutella (small piping bag)
- Dark chocolate (small piece for grating)

Add the mascarpone to a mixing bowl and mix well using a hand mixer.

Add the ricotta and whip it through using a spatula.

Mix through a touch of vanilla essence and 2 tablespoons of sugar. Mix quickly using the hand mixer until you get a creamy consistency.

Prepare your serving glasses and ensure your coffee is nicely chilled.

Dip the Pan di Stelle biscuits, one at a time, into the coffee for no more than one second, then place it in the bottom of the glass.

Add 2 tablespoons of the mascarpone cream to the top of the biscuit, patting it down gently with a spoon.

Squeeze a thick layer of Nutella over the cream layer.

Grate some dark chocolate over the top of the Nutella.

Repeat the layering process (biscuits, cream, Nutella, chocolate), adding 2 biscuits at a time, until you reach the desired height.

On the final layer of your tiramisu, add the cream only to the top of the biscuits and then grate the chocolate on top.
Notes
If making ahead of time, store in the fridge. Remove from the fridge 20 minutes before serving to allow the Nutella to soften. This recipe is egg-free and uses ricotta to lighten the traditional mascarpone base.
