Ingredients
- 1 lb Shrimp (peeled and deveined)
- 1 tbsp Fire & Smoke Society Delicious Mix (or a blend of sea salt, cracked black pepper, garlic, and black garlic)
- 0.25 tsp Cayenne pepper (to taste)
- 1 tbsp Olive oil (for searing shrimp)
- 1 Shallot (diced)
- 3 clove Garlic (minced)
- 1 tbsp Calabrian chilies (chopped)
- 1 cup White wine (Pinot Grigio or Sauvignon Blanc preferred)
- 4 tbsp Unsalted butter (cold, cut into cubes)
- 2 tbsp Fresh parsley (chopped)
- 0.5 Lemon juice (freshly squeezed)
- Black pepper (to taste)
Steps
- 1
Season the shrimp generously with the Delicious Mix (or salt, pepper, and garlic blend) and a pinch of cayenne pepper.
- 2
Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2 to 3 minutes on each side until pink and opaque. Remove the shrimp from the pan and set aside.
- 3
In the same skillet, add the diced shallot. Sauté until fragrant and starting to soften.
- 4
Add the minced garlic and chopped Calabrian chilies to the skillet. Continue to sauté until the shallots are translucent.
- 5
Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom.
- 6
Let the wine simmer and reduce for 10 to 15 minutes until the liquid has thickened slightly and the alcohol smell has dissipated.
- 7
Reduce the heat to low. Slowly stir in the cold butter, one or two tablespoons at a time, whisking constantly to ensure the sauce emulsifies into a creamy consistency without breaking.
- 8
Stir in the chopped parsley, a squeeze of lemon juice, and a crack of fresh black pepper.
- 9
Add the cooked shrimp back into the sauce, tossing gently to coat and warm through before serving.
Notes
The author emphasizes using cold butter and adding it slowly to prevent the sauce from becoming 'broken' or greasy. The seasoning blend used is salty, so additional salt in the sauce may not be necessary.
