Ingredients
- 1 lb chicken breast (thinly sliced)
- 8 oz chow mein noodles (fresh or dried)
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp brown sugar
- 3 garlic (minced)
- 1 tsp ginger (grated)
- 2 cups cabbage (shredded)
- 1 cup carrots (julienned)
- 3 green onions (chopped)
- 2 tbsp vegetable oil (for stir-frying)

Whisk together the soy sauce, oyster sauce, sesame oil, brown sugar, minced garlic, and grated ginger in a small bowl to create the sauce.

Cook the chow mein noodles according to the package instructions, then drain and set aside.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the sliced chicken and stir-fry until fully cooked and browned. Remove chicken from the pan.

Add the remaining oil to the same pan. Add the shredded cabbage and julienned carrots, stir-frying for 2-3 minutes until slightly softened but still crisp.

Return the chicken to the pan and add the cooked noodles.

Pour the sauce over the mixture and toss everything together over high heat for 1-2 minutes until well combined and heated through.

Garnish with chopped green onions and serve immediately.
Notes
Ensure the pan is very hot before adding the chicken to get a good sear. You can substitute chicken with shrimp or tofu if preferred.
