Ingredients
- 2 bananas (ripe; also called guineos or cambur)
- 2 eggs
- 2 tsp pure cocoa powder (do not use sugary mixes like Nesquik)
- 1.5 tsp honey (optional; 1 to 2 teaspoons to taste)
- 70 g dark chocolate (divided; one part for the batter and another for the topping)
- 1 tsp coconut oil (for the chocolate topping)
Steps
- 1
Preheat the oven to 170°C (340°F).
- 2
In a mixer or blender, add the 2 bananas and process until mashed. If you don't have a mixer, you can mash them manually with a fork.
- 3
Add the 2 eggs to the banana mixture.
- 4
Incorporate the 2 teaspoons of pure cocoa powder and the honey (if using) into the mixture.
- 5
Beat or mix all the ingredients well until a creamy and homogeneous consistency is achieved.
- 6
Pour the mixture into an oven-safe dish, preferably heat-resistant glass.
- 7
Chop one part of the dark chocolate and sprinkle the pieces over the mixture. Gently tap the dish to allow the chocolate to settle.
- 8
Place in the oven and bake at 170°C for 25 minutes until cooked through but moist inside.
- 9
While the cake is baking or resting, prepare the topping by melting the rest of the dark chocolate with a teaspoon of coconut oil.
- 10
Pour the melted chocolate topping over the cake while it is still warm.
Notes
If you are diabetic, you can omit the honey. It is important to use pure cocoa powder and high-quality dark chocolate instead of milk or sugar-laden mixes to maintain the healthy profile of the recipe. Moderate consumption is recommended.
