Ingredients

  • 13.5 oz full-fat coconut milk
  • 2 tbsp red curry paste
  • 3 garlic (minced)
  • 2 tsp fresh ginger (minced)
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp peanut butter
  • 1 tbsp sesame oil
  • 2 tsp rice vinegar
  • 1 lime juice (juice of 1 lime)
  • 4 cup bok choy (chopped)
  • 17.5 frozen dumplings (pork, chicken, or veggie; 15-20 count)
  • chili crisp (optional topping)
  • green onions (optional topping)
  • sesame seeds (optional topping)
  • cilantro (optional topping)
  • lime wedges (optional topping)

Steps

    Preheat your oven to 400°F (200°C).

    In a 9×13-inch baking pan, whisk together the coconut milk, red curry paste, minced garlic, minced ginger, soy sauce, oyster sauce, peanut butter, sesame oil, and rice vinegar until well combined and the peanut butter is incorporated.

    Squeeze the juice of one lime into the sauce mixture and stir.

    Stir the chopped bok choy into the sauce until evenly distributed.

    Arrange the frozen dumplings on top of the sauce and bok choy in a single layer.

    Cover the pan tightly with aluminum foil and bake for 25–30 minutes until the dumplings are cooked through and tender.

    Remove from the oven and finish with optional toppings such as chili crisp, sliced green onions, sesame seeds, fresh cilantro, and extra lime wedges. Serve hot.

Notes

You can use any variety of frozen dumplings (potstickers or gyoza) including pork, chicken, or vegetable options. For a spicier dish, increase the amount of red curry paste or be generous with the chili crisp topping.
