Ingredients

  • 0.75 cup Unsalted butter (Room temperature and soft to the touch; if too cold, microwave 10–15 seconds until soft but not melted.)
  • 0.5 cup Granulated sugar
  • 0.333 cup Light brown sugar
  • 0.75 tsp Fine sea salt
  • 2 Eggs (Medium, room temperature.)
  • 1 tbsp Pure vanilla extract
  • 2 tsp Baking powder
  • 2.9375 cups All-purpose flour (3 cups minus 1 tablespoon; sift if lumpy.)
  • 9 tbsp Nutella (Room temperature or cold; never melted. The instructions use 1 tablespoon (14 g) per cookie.)
  • 0.25 cup Granulated sugar (For the cinnamon-sugar coating.)
  • 1 tsp Ceylon ground cinnamon (For the cinnamon-sugar coating.)

Steps

  1. 1

Put the softened, room-temperature butter in a large mixing bowl. If it is too cold to soften, microwave it for just 10–15 seconds; it should be soft but not melted.

  2. 2

Work the butter with a spatula. Add the first measure of granulated sugar and the light brown sugar, then mix very well for about 2–3 minutes.

  3. 3

Add the fine sea salt, room-temperature eggs, and vanilla extract. Mix with a spatula or whisk until just combined.

  4. 4

Add the baking powder and all-purpose flour. Sift the flour first if it is lumpy; switch from a whisk to a spatula if needed. Mix until the flour is fully incorporated.

  5. 5

Chill the dough for 5 minutes.

  6. 6

Using a large cookie scoop, scoop up dough and make a hollow in the center by pushing the sides outward. Add 1 tablespoon (14 g) Nutella to the center. Keep the Nutella cold or at room temperature, not melted.

  7. 7

Lightly tap the scoop with your hand, then cover the Nutella with a thin layer of cookie dough so the filling is enclosed. Repeat with the remaining dough.

  8. 8

In a mixing bowl, combine the second measure of granulated sugar with the ground cinnamon. Dip each dough ball in the mixture, coating the front, back, and sides completely. Place the coated balls in a small parchment-lined pan.

  9. 9

Freeze the coated dough balls for about 20 minutes.

  10. 10

Near the end of the freezing time, preheat the oven to 355°F (180°C). The source suggests starting about 5 minutes before baking if that is how long your oven takes to preheat.

  11. 11

Transfer the dough balls to a large parchment-lined baking pan, spacing them far enough apart to allow them to spread slightly. Bake in the preheated oven for 12–14 minutes.

  12. 12

When the cookies come out of the oven, reshape them if they have spread unevenly; the source notes they should generally come out round.

  13. 13

Sprinkle a little cinnamon sugar over the cookies for extra crunch. Let them rest in the pan for 10–15 minutes, then transfer them to a cooling rack.

  14. 14

    Enjoy.

Notes

Store in a food-safe container at room temperature; refrigerate if the weather is very hot or humid. To freeze unbaked dough, freeze the coated dough balls for 2 hours instead of 20 minutes, then transfer to a labeled freezer container. Bake from frozen without thawing for the same 12–14 minutes. Baked cookies can be frozen for 2–3 months. The structured data gives a 45-minute total time; its prep and cook time fields are malformed, so the listed prep and cook estimates are approximate.
