Ingredients

  • carrot (Quantity not specified)
  • onion (Quantity not specified)
  • green bell pepper (Quantity not specified)
  • chicken thighs (Quantity not specified)
  • salt (To taste; a little is also added when sautéing the vegetables)
  • pepper (To taste)
  • beer (To taste, quite a lot; regular or non-alcoholic beer can be used)
  • 1 vaso chicken broth (Without additives or preservatives)
  • 1 vaso water (Hot)
  • extra-virgin olive oil (A little, for searing the thighs)

Steps

  1. 1

Season the chicken thighs with salt and pepper.

  2. 2

Heat a little extra-virgin olive oil in the pot and sear the thighs. Remove them and set aside.

  3. 3

In the same pot, sauté the carrot, onion, and green bell pepper with a little salt.

  4. 4

Return the thighs to the pot.

  5. 5

Add a glass of chicken broth and a glass of hot water.

  6. 6

Add plenty of beer, to taste. Cook until the beer smell has dissipated and the thigh meat is cooked through and comes away from the bone. The author specifies about 15 minutes in a pressure cooker; no cooking time is given for a conventional pot.

  7. 7

Remove the thighs and purée the vegetables in the pot until smooth to make the sauce.

  8. 8

Return the thighs to the pot and let them cook a little longer.

Notes

No quantities are given for the vegetables, thighs, salt, pepper, beer, or oil. The size of the glass is also unspecified; it has been estimated at 240 ml. No cooking time is provided for a conventional pot. “Hacer chu chu” is interpreted as letting it cook a little longer.
