Line a small plate or tray with parchment paper. Divide the Nutella into 8 small portions, about 1 tablespoon each, and flatten them into disks. Freeze for at least 20–30 minutes, until firm enough to handle.

In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt until evenly combined and no streaks of cocoa remain.

In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.

Pour the wet mixture into the dry ingredients. Whisk just until combined; a few small lumps are acceptable. Do not overmix, or the pancakes may become dense. Let the batter rest for 5 minutes.

Heat a nonstick skillet or griddle over medium-low heat. Lightly grease it with butter. The pan is ready when a small drop of batter begins to sizzle gently without browning immediately.

Add about 2 tablespoons of batter for each pancake. Place one frozen Nutella disk in the center, keeping it away from the edges, then cover it with another 1–2 tablespoons of batter so the filling is completely enclosed.
