Ingredients
- 227 g unsalted butter (Very soft and pliable, but not melted)
- 200 g light brown sugar (Packed)
- 150 g granulated sugar
- 2 large eggs (At room temperature if possible)
- 360 g all-purpose flour (Measure by weight for best results)
- 1 tsp baking soda
- 1 tsp fine salt (Adjust according to the saltiness of the butter and chocolate)
- 300 g semisweet chocolate chips (Reserve about 54 chips for topping, approximately 3 per cookie)
Steps
- 1
Place the very soft, pliable butter in a large mixing bowl. The butter should spread easily around the bowl but should not be melted.
- 2
Add the brown sugar and granulated sugar to the butter. Beat until the mixture is creamy, evenly colored, and fluffy, scraping down the sides of the bowl as needed.
- 3
Add the eggs one at a time, mixing after each addition until incorporated and the mixture is smooth.
- 4
In a separate bowl, whisk together the flour, baking soda, and salt so the dry ingredients are evenly distributed.
- 5
Add the dry ingredients to the butter mixture. Mix gently and stop while a little flour is still visible rather than overmixing the dough.
- 6
Add the chocolate chips all at once while the dough still has some visible flour. Mix only until the chips are distributed and the dough is nearly combined.
- 7
Stop the mixer while the dough is still somewhat crumbly. Finish bringing it together gently by hand until it is smooth and no longer sticky.
- 8
Cover the dough and chill it in the refrigerator for about 20 minutes. Meanwhile, heat the oven to 350°F (175°C) and line a sheet pan with parchment paper.
- 9
Weigh each portion of dough so the cookies are uniform; approximately 75–85 g per cookie will yield about 18 cookies. Arrange only 6–8 portions on each sheet pan to leave space for airflow and spreading.
- 10
Roll each portion firmly between your palms into a compact, round ball. Compress the dough so the centers remain chewy while the edges become crisp.
- 11
Place the dough balls on the prepared pan. Press or arrange about three reserved chocolate chips on top of each one for an even appearance.
- 12
Bake one pan at a time for approximately 10–12 minutes, until the bottoms and edges are lightly golden brown while the centers still look slightly soft.
- 13
Let the cookies cool on the sheet pan for several minutes so the centers finish setting. Transfer them to a rack and serve once warm or fully cooled.
Notes
The transcript gives the method and key chilling and shaping guidance but does not provide the original measured ingredient list, oven temperature, or exact bake time. Quantities and baking details are therefore estimated from a standard thick bakery-style chocolate-chip-cookie formula. Do not overcrowd the pan; bake in batches of six to eight cookies. Store cooled cookies airtight for up to 4 days, or freeze shaped dough portions for later baking.
