Ingredients
- 500 g all-purpose flour (Equal parts by weight with the crème fraîche)
- 500 g crème fraîche (Can substitute with sour cream; plus extra for brushing)
- 1 tbsp baking powder (Standard amount for this volume of flour)
- 100 g granulated sugar (Estimated for a standard scone dough)
- 100 g shredded coconut (Part of the 200g total add-ins)
- 100 g milk chocolate chips (Part of the 200g total add-ins)
- brown sugar (For dunking the tops before baking)
Steps
- 1
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- 2
In a large mixing bowl, combine the flour and baking powder.
- 3
Add the granulated sugar, shredded coconut, and milk chocolate chips to the dry mixture and stir to distribute the add-ins evenly.
- 4
Add the crème fraîche (or sour cream) directly into the bowl with the dry ingredients.
- 5
Mix the ingredients together until just combined. Be careful not to over-mix, as this can make the scones gummy; the dough should be combined but not sticky to your hands.
- 6
If the dough feels slightly sticky, let it rest on the counter for 10 to 15 minutes before shaping.
- 7
Using a kitchen scale, weigh out portions of dough into 100-gram pieces (this batch should yield approximately 11 scones).
- 8
Gently shape each portion into a round scone and place them on the prepared baking sheet.
- 9
Brush the top of each scone with a little bit of extra crème fraîche.
- 10
Dunk the brushed side of each scone into a bowl of brown sugar to create a thick coating.
- 11
Bake for 18-22 minutes until the outside is crunchy and golden brown, but the center remains soft.
Notes
The creator emphasizes that for scones, you should use sour cream/crème fraîche, whereas for biscuits, you use butter. You can customize this recipe by using 200g of any add-ins you prefer (nuts, dried fruit, different chocolate) instead of the coconut and chocolate chips mentioned.
