Ingredients

  • 1 kg chicken wings (cut into pieces (flats and drumettes))
  • 1 tsp annatto powder
  • 1 tsp paprika
  • 0.5 tsp dried chili flakes (or to taste)
  • 1 tbsp baking powder (for extra crispy skin)
  • salt (to taste)
  • black pepper (to taste)
  • 2 tbsp butter
  • 4 garlic (cloves, finely minced)
  • 0.5 cup passion fruit pulp (with or without seeds, according to preference)
  • 0.25 cup molasses (or cane syrup for dark color and sweetness)
  • 4 allspice berries (whole (pimento))
  • 1 shot tequila (approximately 1.5 oz)
  • chives (fresh, chopped for garnish)
  • sour cream (for serving)

Steps

    Cut the chicken wings, separating the drumette from the flat if they come whole.

    In a large bowl, marinate the wings with annatto powder, paprika, dried chili flakes, baking powder, salt, and pepper to taste. Ensure all pieces are well coated.

    Place the wings on a tray and leave them uncovered in the refrigerator for at least 30-60 minutes; this will dry out the skin to make it ultra-crispy when cooked.

    Cook the wings in the air fryer at 200°C (400°F) for 20-25 minutes, flipping them halfway through, until they are golden and crispy.

    While the wings are cooking, prepare the sauce: in a skillet over medium heat, melt the butter and infuse it with the minced garlic until fragrant but not burnt.

    Add the passion fruit pulp, molasses, and allspice berries to the skillet.

    Allow the sauce to reduce over low heat until it thickens and takes on a dark, glossy color.

    Finish the sauce by adding the shot of tequila and let it cook for 1-2 more minutes for the alcohol to evaporate.

    Once the wings are ready, add them to the skillet with the sauce and mix well until they are completely coated, sticky, and caramelized.

    Serve the wings immediately, garnished with chopped chives and accompanied by a side of sour cream.

Notes

The secret to the texture is the baking powder and the uncovered resting time in the refrigerator, which removes moisture from the skin. If you don't have molasses, you can use honey or liquid panela, though the color will be less intense.
