Ingredients

  • 1 lb Ground chicken or pork (Choose chicken or pork)
  • 0.5 cup Green onions (Chopped, plus sliced green onions for garnish (unquantified))
  • 6 Garlic (Cloves, minced)
  • 3 tbsp Soy sauce (Additional soy sauce for garnish, to taste)
  • 1 tbsp Rice vinegar
  • 1 tbsp Toasted sesame oil
  • 2 tbsp Chili crunch (Additional chili crunch for garnish, to taste)
  • 1 tbsp Fresh ginger (Grated)
  • 1 tbsp Oyster sauce
  • 21 Wonton or dumpling wrappers (Source specifies 18–24; use enough to cover each layer and finish with a top layer)
  • 2 tbsp Chicken stock or water (Use chicken stock or water)
  • Water (For briefly dipping the wrappers; amount as needed)
  • Green onions (Sliced, for garnish)
  • Sesame seeds (For garnish; amount to taste)

Steps

  1. 1

In a bowl, combine the ground chicken or pork, chopped green onions, minced garlic, soy sauce, rice vinegar, toasted sesame oil, chili crunch, grated ginger, and oyster sauce. Mix with your hands just until combined.

  2. 2

Set a steamer over a pot of gently boiling water. Alternatively, place a heat-safe rack or trivet inside a large pot. Choose a baking dish that fits comfortably inside with the lid fully closed; the source used an 8 × 8-inch dish. Keep the water level below the dish.

  3. 3

Briefly dip each wrapper in water for 1–2 seconds. Arrange a layer across the bottom of the baking dish, overlapping the wrappers as needed to cover it completely; the overlap helps the layers hold together. The source used about 6 wrappers per layer.

  4. 4

Spread a thin layer of the meat mixture over the wrappers.

  5. 5

Repeat the wrapper and meat layers until the mixture is used, arranging the layers to fit your dish. The source made 4 layers; use a final layer of wrappers on top.

  6. 6

Pour the chicken stock or water evenly over the top layer.

  7. 7

Carefully place the dish in the steamer and cover it. Steam over a gentle boil for 20–22 minutes, until the meat is cooked through and the top is glossy.

  8. 8

Finish with a drizzle of soy sauce, plenty of chili crunch, sliced green onions, and sesame seeds. Slice like lasagna and serve.

Notes

The source gives a range of 18–24 wrappers and uses about 6 per layer. Garnish quantities are not specified. Preparation time is estimated.
