Oven-Baked Beef Döner Kebab
A homemade version of the popular Turkish döner kebab, prepared with ground beef, Greek yogurt, and spices. The mixture is baked into a compact loaf, then thinly sliced and served in pita bread with vegetables and sauce.

Ingredients
- 1 lb ground beef (Preferably with approximately 15–20% fat)
- 0.5 cup plain Greek yogurt (Unsweetened; helps keep the meat moist and tender)
- 0.5 yellow onion (Grated or finely chopped)
- 2 dientes garlic (Grated or finely chopped)
- 1 tsp ground cumin
- 1 tsp sweet paprika
- 1 tsp dried oregano

- ground black pepper (To taste; approximately 1/2 tsp is recommended)
- 4 pita bread (For serving)
- 2 cup lettuce (Thinly sliced, for serving)
- 1 tomato (Sliced, for serving)
- 0.25 red onion (Thinly sliced, for serving)
- 0.5 cup yogurt sauce or tzatziki (For serving; optional)

Preheat the oven to 200 °C (400 °F). Line a baking sheet or baking pan with aluminum foil or parchment paper.

Place the ground beef in a large bowl. Add the Greek yogurt, grated onion, garlic, cumin, paprika, oregano, salt, and pepper.

Mix with clean hands or a spatula until fully combined. Do not overwork the mixture, but make sure the spices and yogurt are evenly distributed.

Transfer the mixture to the baking sheet and shape it into a compact, elongated roll or loaf approximately 5–7 cm thick. Pack the meat firmly so it can be sliced after baking.

Bake for 40–45 minutes, until the loaf is fully cooked in the center and reaches a minimum internal temperature of 71 °C (160 °F). The surface should be browned and the meat should feel firm.

Remove the meat from the oven and let it rest for 10 minutes. Resting helps it retain its juices and makes slicing easier.

Slice the meat as thinly as possible, like döner strips. For more browned edges, place the slices in a hot skillet for 1–2 minutes per side, if desired.

Lightly warm the pita breads. Fill them with the sliced meat, lettuce, tomato, red onion, and yogurt sauce or tzatziki.

Serve immediately while the meat is hot and the vegetables remain fresh and crisp.
