- 1.5 lb Chicken breast (thinly sliced)
- 1 Green bell pepper (thinly sliced)
- 1 Red bell pepper (thinly sliced)
- 1 Onion (thinly sliced)
- 2 clove Garlic (minced)
- 2 Lime (halved or sliced for the pan)
- 2 tbsp Olive oil (for coating)
- 2 tbsp Fajita seasoning (homemade or store-bought)
- 8 Tortillas (for serving)
- Salsa (for serving)
- Sour cream (for serving)
- Guacamole (for serving)

Preheat your oven to 400°F (200°C).

Thinly slice the chicken breast, green bell pepper, red bell pepper, and onion.

Place the sliced chicken and vegetables onto a large sheet pan.

Add the minced garlic to the pan.

Drizzle with olive oil and sprinkle the fajita seasoning over the chicken and vegetables.

Toss everything together on the pan until evenly coated, then spread into a single layer.

Place the lime halves or slices onto the pan with the other ingredients.

Roast in the oven for 15 minutes, or until the chicken is cooked through and the vegetables are tender.

Squeeze the roasted lime juice over the pan before serving.

Assemble the fajitas using warm tortillas and top with salsa, sour cream, and guacamole.
Notes
For the homemade seasoning, you can use a blend of chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Ensure the chicken is sliced thinly so it cooks at the same rate as the vegetables.
