Protein Raffaello Jar
An overnight breakfast dessert inspired by Raffaello candies, made with a creamy coconut-protein filling, white chocolate, and crunchy almonds. The reconstructed serving provides approximately 60 g of protein.

Ingredients
- 300 g Skyr or thick high-protein Greek yogurt (Plain, preferably 0% fat)
- 30 g Vanilla protein powder (Whey or a plant-based vanilla protein powder)
- 15 g Unsweetened shredded coconut (Plus extra for topping if desired)
- 15 g White chocolate (Melted for the topping or drizzle)
- 15 g Almonds (Roughly chopped for crunch)
- 30 ml Milk or water (Add only as needed to loosen the filling)

Add the skyr or thick Greek yogurt, vanilla protein powder, shredded coconut, and milk or water to a bowl or jar. Stir thoroughly until smooth and creamy, scraping the sides so no dry protein powder remains. Add a little more liquid if needed to reach a spoonable pudding-like consistency.

Melt the white chocolate gently in the microwave in 10- to 15-second bursts, stirring between each burst, or melt it over a bowl set above barely simmering water. Stop as soon as it is smooth; do not overheat it.

Spoon the coconut protein filling into a serving jar or glass and smooth the surface.

Pour or drizzle the melted white chocolate over the filling, then scatter the chopped almonds over the top. Add a little extra shredded coconut if desired.

Cover the jar and refrigerate it overnight, or for at least 4 hours, until thoroughly chilled and set. Serve cold the next morning.
