Ingredients

  • 1.5 lb Chicken breast (cut into 1-inch bite-sized pieces)
  • 1.5 lb Gold potatoes (diced into small cubes)
  • 3 cup Broccoli florets (cut into small bite-sized pieces)
  • 3 tbsp Olive oil (divided)
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • 0.5 tsp Dried oregano
  • Salt (to taste)
  • Black pepper (to taste)
  • 0.25 cup Parmesan cheese (grated, for topping)

    Preheat your oven to 400°F (200°C). Prepare a large rimmed sheet pan by lightly greasing it or lining it with parchment paper for easy cleanup.

    Place the diced gold potatoes on the sheet pan. Drizzle with 1.5 tablespoons of olive oil and season with half of the garlic powder, onion powder, paprika, salt, and pepper.

    Toss the potatoes to coat evenly and spread them out in a single layer. Roast in the preheated oven for 15-20 minutes, or until they are just starting to soften and brown.

    While the potatoes are roasting, place the bite-sized chicken pieces in a bowl. Add the remaining 1.5 tablespoons of olive oil and the rest of the seasonings (garlic powder, onion powder, paprika, oregano, salt, and pepper). Toss well to ensure the chicken is fully coated.

    Remove the sheet pan from the oven. Move the potatoes to one side or create space to add the seasoned chicken and the broccoli florets to the pan.

    Toss the broccoli with a small drizzle of oil and a pinch of salt if desired. Spread everything out so it is not overcrowded to ensure even roasting.

    Return the pan to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the broccoli is tender-crisp with charred edges.

    Remove from the oven and immediately sprinkle the grated parmesan cheese over the hot chicken and vegetables. Serve warm.

Notes

For the best results, ensure the potatoes are cut into small, uniform cubes so they cook at the same rate as the chicken. If you prefer softer broccoli, add it at the same time as the chicken; if you prefer it very crunchy, add it during the last 10 minutes of cooking.
