Ingredients

  • 500 g puff pastry
  • plain flour (Small handful, for dusting the board, rolling pin, and pastry)
  • Christmas leftovers (Selection; cut chunky items down to size. Examples mentioned: sausages, parsnips, potatoes, and pigs in blankets)
  • 1 tbsp olive oil
  • 1 egg (Whisked, for brushing)
  • bread sauce (A little in the middle of each piece of pastry, if available)
  • cranberry sauce (Leftover sauce, warmed, for topping)
  • Maldon salt (For topping, to taste)
  • black pepper (For topping, to taste)
  • Parmesan (Lightly dusted over the tarts; the transcript specifies Parmigiano-Reggiano)
  • baking parchment (For lining the roasting tray)

Steps

  1. 1

    Preheat the oven to 200°C/390°F.

  2. 2

Dust the work surface, rolling pin, and puff pastry with plain flour. Roll the pastry to 2–3 mm thick, roughly trim it to fit the roasting tray, and save any offcuts to reroll later.

  3. 3

Cut the pastry into 6 individual pieces. Place them in the tray to check the sizing, then set them aside.

  4. 4

Cut any chunky leftover items into smaller pieces. Halve sausages or pigs in blankets lengthwise, and cut down parsnips and potatoes so they are not too bulky.

  5. 5

Line the roasting tray with baking parchment. Wipe the olive oil over the parchment.

  6. 6

Arrange the Christmas leftovers on the oiled parchment in the tray.

  7. 7

If using bread sauce, place a little in the middle of each piece of pastry.

  8. 8

Lay the pastry pieces over the leftovers. Push the edges down around the filling and between the tarts with your fingers.

  9. 9

Score the pastry tops, then brush them with the whisked egg.

  10. 10

Bake for 20–30 minutes, keeping an eye on the tarts, until the pastry is golden brown.

  11. 11

Remove the tray from the oven. Lift the tarts out on the parchment and score between them to separate the individual tarts.

  12. 12

Turn the tarts over. Top with warmed leftover cranberry sauce, Maldon salt, black pepper, and a light dusting of Parmesan.

Notes

The amount and exact combination of Christmas leftovers, bread sauce, cranberry sauce, salt, pepper, and Parmesan are not specified. Use the leftovers available; the source does not give quantities for these toppings.
