Coconut Lime Poached Cod

Ingredients
- 5 cod (4-6 pieces, thawed and patted dry)
- 1 tbsp oil (any kind)
- 1 shallot (thinly sliced)
- 3 cloves garlic (minced)
- 7 slices ginger (6-8 slices, peel can be left on)
- 1.5 tbsp red curry paste (1-2 tbsp depending on spice preference)
- 1 can coconut milk (standard 13.5 oz can)
- 1.5 tsp lime zest
- 1 tsp sugar (optional)
- 1 tsp salt
- 0.5 tsp pepper
- green onion (for topping)
- cilantro (for topping)
- chili oil (optional topping)
- fresh lime (for topping)

If using frozen cod, remove fillets from vacuum packaging and place in a large Ziploc bag. Squeeze out air, seal, and submerge in a bowl of cold water with a weight on top for 15 minutes. Replace with fresh cold water for another 15 minutes until thawed.

Gently squeeze excess water out of the thawed cod or press firmly with paper towels to dry.

Thinly slice the shallot, mince the garlic, and slice the ginger into 6-8 pieces (peel can stay on). Zest the lime.

In a pan over medium-low heat, add 1 tablespoon of oil. Add the sliced shallot, minced garlic, and sliced ginger.

Sauté the aromatics for 3-5 minutes until fragrant and softened.

Add 1-2 tablespoons of red curry paste to the pan. Mix well until the paste is fully incorporated with the aromatics.

Pour in the can of coconut milk and stir to combine.

Add the lime zest, sugar (if using), salt, and pepper. Stir and bring the mixture to a gentle simmer.

Place the cod pieces into the simmering sauce. Spoon some of the sauce over the top of the fish.

Cover the pan and cook for 12 minutes on medium-low heat.

Once cooked, spoon additional sauce over the fish and garnish with sliced green onions, cilantro, chili oil, and fresh lime wedges.
Notes
For those who prefer more heat, use the full 2 tablespoons of red curry paste. This dish pairs well with brown rice as suggested by community members.
