- 4 Egg yolks (Large, high-quality eggs recommended)
- 0.5 cup Soy sauce (Enough to cover the yolks)
- 2 tbsp Mirin

In a small container or bowl, combine the soy sauce and mirin, stirring gently to mix.

Carefully separate the egg yolks from the whites, ensuring no yolk breaks and no white remains attached.

Gently place the egg yolks into the soy sauce mixture. They should be mostly submerged.

Cover the container with a lid or plastic wrap and place it in the refrigerator.

Allow the yolks to cure for at least 4 hours for a soft set, or up to 24 hours for a firm, jammy texture.

Carefully remove the yolks from the liquid and serve over hot rice, toast, or noodles.
Notes
The leftover curing liquid can be reused once for another batch of yolks or used as a seasoned soy sauce for stir-fries. Do not cure for longer than 24 hours as the yolks can become overly salty and tough.
