Ingredients
- 2 cup almond flour
- 0.5 cup peanut butter
- 0.25 cup maple syrup (For the cookie dough)
- 1 tsp vanilla extract
- 0.333 cup dark chocolate chips (For the cookie dough)
- 200 g cream cheese (For the filling)
- 0.5 cup plain Greek yogurt (For the filling)
- 2 tbsp maple syrup (For the filling)
- 1.25 cup dark chocolate (Melted, for coating half of each sandwich)

Line a tray or shallow pan with parchment paper. Use a size that allows you to form an even layer of dough and cut individual portions afterward.

Prepare the cookie dough: mix the almond flour, peanut butter, ΒΌ cup maple syrup, and vanilla extract until you have a soft, cohesive dough.

Add the dark chocolate chips to the dough and mix until evenly distributed.

Press half of the cookie dough onto the lined tray, forming a flat layer of even thickness.

Prepare the filling: mix the cream cheese, Greek yogurt, and 2 tbsp maple syrup until smooth, homogeneous, and lump-free.

Spread the cream cheese filling evenly over the first layer of cookie dough, reaching the edges uniformly.

Place and gently press the remaining cookie dough over the filling, covering it completely without excessively compressing the cream.

Freeze for 2β3 hours, until firm and easy to cut cleanly.

Remove the frozen block from the tray and cut it into squares or rectangles of the desired size to form the sandwiches.

Melt the dark chocolate carefully, using short intervals in the microwave and stirring between each interval, or melt it in a double boiler. It should be fluid but not excessively hot.

Dip half of each frozen sandwich in the melted chocolate and let the excess drip off before placing it on parchment paper.

Freeze the sandwiches again for 15β20 minutes, until the chocolate coating is completely firm and crisp.
