Ingredients

  • 1 cup Greek yogurt (Preferably thick and plain)
  • 0.5 cup Peanut butter (Smooth or creamy)
  • 0.333 cup Honey
  • 1 cup Dark chocolate (At least 70% cocoa; melted for dipping)
  • Fleur de sel (Optional; use a pinch to taste. Nutritional estimate based on approximately 1 g.)
  • Crushed peanuts (Optional; sprinkle to taste. Nutritional estimate based on approximately 15 g.)

    Line a tray or baking sheet with parchment paper. Make sure it fits in the freezer and has enough space to separate the bites.

    Place the Greek yogurt, peanut butter, and honey in a bowl. Mix with a spatula or whisk until completely smooth, thick, and homogeneous.

    Using a spoon or ice cream scoop, place small portions of the mixture onto the prepared tray, leaving space between them so they can be handled later.

    Freeze the bites for approximately 1 hour, until firm enough to remove and dip without deforming.

    Meanwhile, melt the dark chocolate in a double boiler or in the microwave in short intervals, stirring between each interval. It should be smooth and lump-free; let it cool slightly if it is too hot.

    Remove the frozen bites and dip each one in the melted chocolate, carefully turning it until completely coated. Let the excess drip off, then place it back on the parchment paper.

    Before the chocolate sets, finish each bite with a pinch of fleur de sel and some crushed peanuts, if using.

    Freeze the bites again for 20-30 minutes, until the chocolate coating is completely set and crisp.

    Serve them straight from the freezer or let them stand for a few minutes so the center softens slightly while the coating remains firm.

Notes

Store the bites in an airtight container in the freezer. The exact number of pieces depends on the portion size. The fleur de sel and crushed peanuts are optional.
