Chicken Waffle Caesar Salad Sandwich

Ingredients
- 150 g Ground chicken breast (seasoned with salt, pepper, and garlic powder)
- 1 Egg (beaten, for the chicken waffle mixture)
- 20 g Grated parmesan cheese (divided between the waffle mixture and the topping)
- 1 cup Romaine lettuce (finely chopped)
- 2 tbsp Light Caesar dressing
- 2 tiras Turkey bacon (cooked until crispy)
- Black pepper (to taste)

In a medium bowl, combine the ground chicken breast with the beaten egg, a portion of the parmesan cheese, salt, pepper, and garlic powder. Mix well until completely incorporated.

Preheat a small waffle maker and spray it with non-stick cooking spray.

Divide the chicken mixture into two equal portions. Place each portion into the waffle maker and cook until the chicken is thoroughly cooked, golden brown, and crispy on the outside (approximately 5-7 minutes depending on power).

While the chicken waffles are cooking, prepare the salad by mixing the chopped romaine lettuce with the light Caesar dressing in a small bowl.

Cook the turkey bacon strips in a skillet until crispy and cut them into small pieces.

To assemble the sandwich, place one chicken waffle as the base. Add a generous layer of the prepared Caesar salad.

Add the crispy bacon and sprinkle the remaining parmesan cheese on top.

Top with the second chicken waffle and serve immediately.
Notes
To keep the recipe low-calorie, make sure to use a 'light' or low-fat Caesar dressing. If you don't have a waffle maker, you can form thin patties and cook them in a skillet.
