Creamy Chicken Noodle Soup with Potatoes

Ingredients
- 2 tbsp butter (divided)
- 2 tbsp olive oil (divided)
- 2 chicken breasts (seasoned with salt and pepper)
- 0.5 yellow onion (large, diced)
- 3 stalks celery (diced)
- 2.5 carrots (large, diced (2-3 carrots))
- 1 tbsp Italian seasoning
- 1 tsp red pepper flakes (to taste)
- salt and pepper (to taste)
- 9 cloves garlic (minced (8-10 cloves))
- 0.5 cup dry white wine (optional)
- 6 cup chicken broth
- 2.5 cup Yukon gold potatoes (diced (2-3 cups))
- 1.5 tsp chicken bouillon (optional (1-2 tsp))
- 1 Parmesan rind (optional)
- 1 bay leaf
- 0.75 cup heavy cream (to taste (1/2 - 1 cup))
- 0.5 lemon juice (juice of 1/2 lemon)
- 0.25 cup fresh parsley (to taste)
- 2 tbsp fresh dill (to taste)
- 1 tbsp fresh rosemary (to taste)
- 1 tbsp fresh thyme (to taste)
- 1 lb egg noodles (cooked separately in salted water)
- Garnish: Parmesan, lemon juice, dill, black pepper, red pepper flakes, olive oil (for serving)

Cook the egg noodles in salted water according to package instructions. Drain and set aside.

In a large soup pot or Dutch oven, heat 1 tbsp butter and 1 tbsp olive oil over medium-high heat.

Sear the chicken breasts on both sides until golden, about 3-4 minutes per side, then remove them from the pot and set aside.

Add the remaining olive oil and butter to the pot.

Lower the heat to medium, then add the diced onion, celery, and carrot.

Season the vegetables with salt, pepper, Italian seasoning, and red pepper flakes (if using), and sauté for 5-7 minutes until the vegetables are softened.

Add the minced garlic and cook for another 30 seconds until fragrant.

Pour in the white wine, if using, stir and let simmer for 2 minutes.

Pour in the chicken broth and season again with salt and pepper.

Add the diced potatoes, chicken bouillon, Parmesan rind, and bay leaf. Stir to combine.

Return the seared chicken breasts to the pot.

Bring the mixture to a boil and simmer for 15-20 minutes, until the potatoes are fork-tender.

Remove the chicken breasts from the pot, shred them using two forks, and set aside.

Check the potatoes to ensure they’re done, then remove the Parmesan rind and bay leaf.

Stir in the heavy cream and lemon juice, followed by the fresh parsley, dill, rosemary, and thyme.

Return the shredded chicken to the pot, taste for seasoning, and adjust as needed.

Notes
Cooking the noodles separately prevents them from absorbing all the broth and becoming mushy, especially if you plan to have leftovers. The Parmesan rind adds a deep savory (umami) flavor to the broth.
