Ingredients

  • 800 g sweet potatoes (about 4 medium potatoes)
  • olive oil (for coating potatoes)
  • 600 g 5% fat beef mince (extra lean ground beef)
  • 160 g sweetcorn (tinned, drained)
  • 160 g black beans (tinned, drained)
  • smoked paprika (to taste)
  • cumin (to taste)
  • chilli powder (to taste)
  • salt (to taste)
  • pepper (to taste)
  • 100 g avocado (sliced or diced)
  • 40 g mature cheddar cheese (grated)

Steps

    Preheat your oven to 180°C (350°F).

    Rub the sweet potatoes with a little olive oil and salt, then bake in the preheated oven for approximately 50 minutes until they are soft all the way through.

    While the potatoes are baking, place the beef mince in a frying pan over medium-high heat.

    Fry the beef mince, breaking it up with a spoon, until it is thoroughly browned.

    Add the smoked paprika, cumin, chilli powder, salt, pepper, drained sweetcorn, and drained black beans to the pan with the beef.

    Mix everything together well and cook for a further 1 minute to allow the flavors to meld.

    Once the sweet potatoes are soft, remove them from the oven and slice each one open lengthwise.

    Load the center of each sweet potato with a generous portion of the spiced beef and bean mixture.

    Finish each serving by topping with avocado and grated mature cheddar cheese.

Notes
