Chinese Egg Drop Soup

Ingredients
- 2 eggs (beaten)
- 500 ml water or vegetable broth
- 1 tbsp soy sauce (shoyu)
- 1 tsp sesame oil
- 1 tbsp small dried shrimp (tiny)
- cilantro (to taste)
- white pepper (to taste)
- dried seaweed (previously hydrated, to taste)

Put the water or vegetable broth in a pot and bring it to a boil.

In a separate bowl, beat the eggs.

Slowly pour the beaten eggs over the boiling broth, stirring gently with a spoon or chopsticks to form the characteristic ribbons.

Add the dried shrimp, cilantro, soy sauce, sesame oil, and white pepper to the pot.

Mix everything gently to combine the flavors.

Place the previously hydrated seaweed at the bottom of an individual bowl.

Notes
For a deeper flavor, it is recommended to use vegetable broth or even chicken broth instead of plain water. Ensure the broth is at a rolling boil when pouring the egg to achieve the correct ribbon texture.
