Ingredients
- 4 Chicken Thigh (boneless, skinless)
- 3 tbsp Chinese Light Soy Sauce (for marinade)
- 2 tbsp Oyster Sauce (for marinade)
- 2 tsp Sesame Oil (for marinade)
- 1 tsp Chicken Bouillon (powdered)
- 2 tbsp Corn Starch (for marinade)
- 2 tbsp Chinese Light Soy Sauce (for sauce)
- 1 tbsp Chinese Dark Soy Sauce (for sauce)
- 2 tbsp Oyster Sauce (for sauce)
- 1 tbsp Shaoxing Wine (for sauce)
- 2 tbsp Honey (or sugar; for sauce)
- 0.5 cup Chicken Stock (for sauce)
- 1 tbsp Corn Starch (for sauce)
- 0.5 Sweet Onion (sliced into chunks)
- 0.5 Green Bell Pepper (sliced into chunks)
- 4 cloves Garlic (minced)
- 1.5 tbsp Black Pepper (freshly ground)
- Cooking Oil (for stir-frying)

Cut the chicken thighs into bite-sized pieces and place them in a bowl.

Add the light soy sauce, oyster sauce, sesame oil, chicken bouillon, and corn starch to the chicken. Mix well and set aside to marinate.

In a separate small bowl, whisk together the sauce ingredients: light soy sauce, dark soy sauce, oyster sauce, Shaoxing wine, honey (or sugar), chicken stock, and corn starch. Set aside.

Prep the vegetables by slicing the sweet onion and green bell pepper into bite-sized chunks and mincing the garlic.

Heat cooking oil in a wok or large skillet over high heat. Add the marinated chicken and stir-fry until browned and cooked through. Remove chicken from the pan and set aside.

In the same pan, add a little more oil if needed. Sauté the onions and bell peppers until they are slightly softened but still have a crisp bite.

Add the minced garlic and black pepper to the vegetables and sauté for 30 seconds until fragrant.

Return the cooked chicken to the pan. Give the sauce mixture a quick stir to redistribute the corn starch, then pour it over the chicken and vegetables.

Stir-fry for another 1-2 minutes until the sauce has thickened and glossily coats all the ingredients. Serve immediately over steamed rice.
Notes
For the best flavor, use freshly ground black pepper. Adjust the amount of pepper based on your heat tolerance.
