Ingredients
- 4.5 boneless skinless chicken thighs (4-5 thighs)
- 3 tbsp olive oil (divided)
- 2 tbsp mellow white miso paste
- 2.5 tsp freshly grated ginger (2 tbsp plus ½ tsp, divided)
- 2 tbsp mirin or rice wine vinegar
- 5 tbsp tamari (divided)
- 2 tbsp honey
- 2 garlic (cloves, minced or grated)
- 2 cup chicken bone broth
- 1 baby bok choy (quartered)
- green onion (thinly sliced for garnish)
- chili garlic oil (for garnish)
- sesame seeds (for garnish)
- white rice (cooked, for serving)
Steps
- 1
Combine miso paste, 2 tablespoons of ginger, mirin, 3 tablespoons of tamari, honey, and minced garlic in a small bowl and whisk well until smooth.
- 2
Pour the marinade over the chicken thighs, toss to coat evenly, and allow it to marinate for at least 30 minutes up to several hours in the refrigerator.
- 3
Add 2 tablespoons of olive oil to a large skillet over medium heat.
- 4
Add the marinated chicken to the skillet and cook undisturbed on the first side for 7 minutes.
- 5
Flip the chicken and cook for an additional 7 minutes on the second side until cooked through and the internal temperature reaches 165°F. Remove the chicken from the pan and set aside.
- 6
Add the quartered baby bok choy to the hot pan (add more olive oil if needed). Sear on all sides until softened through, about 5 minutes total, then remove from heat.
- 7
Add 1 tablespoon of olive oil to a clean pan over medium heat.
- 8
Add the remaining ½ teaspoon of ginger and lightly sauté for one to two minutes until fragrant.
- 9
Add in the chicken bone broth and the remaining 2 tablespoons of tamari. Bring to a simmer, stirring to release any ginger that may have stuck to the pan. Turn off heat once simmering.
- 10
To serve, add a scoop of cooked white rice to a bowl, top with the ginger broth, and finish with the cooked chicken and bok choy.
- 11
Garnish with sliced green onions, chili garlic oil, and sesame seeds.
Notes
The chicken marinade is also excellent on its own if you don't want to make the full brothy bowl. You can substitute noodles for the rice if preferred.
