Miso & Ginger Chuck Roast

Ingredients
- 3 lb beef chuck roast (cut into thirds)
- 0.333 cup low sodium tamari
- 2 tbsp miso
- 2 tbsp honey
- 1.333 tbsp rice wine vinegar (1 tbsp plus 1 tsp)
- 3 garlic (cloves, minced or grated)
- 3 tbsp fresh ginger (about 3 inches, finely grated)
- 1 tsp red pepper flakes
- 1 cup beef bone broth (only if using a Dutch oven or roasting pan with foil; omit if using a covered roasting pan)
- green onion (for garnish)
- sesame seeds (for garnish)

Preheat your oven to 325°F (165°C).

In a small bowl, combine the tamari, miso, honey, rice wine vinegar, minced garlic, grated ginger, and red pepper flakes. Whisk well until the marinade is thoroughly combined.

Place the beef chuck roast pieces in a bowl or dish, pour the marinade over the meat, and toss to ensure every piece is evenly coated.

Transfer the meat to your roasting dish. If using a Dutch oven or a roasting pan that will be covered with aluminum foil, add 1 cup of beef bone broth to the pot now. If using a roasting pan with its own tight-fitting cover, the broth can be omitted.

Cover the dish tightly and roast in the oven for 3 hours.

Remove from the oven and check for doneness. If the meat pulls apart easily with a fork, shred it into large chunks and toss them in the accumulated juices. If it is not yet tender, return it to the oven covered for an additional 30 minutes.

Once the meat is shredded and tender, increase the oven temperature to 450°F (230°C).

Return the shredded meat to the oven, uncovered, and cook for 15 minutes longer until the top layer is crispy and caramelized.

Garnish the finished roast with sesame seeds and sliced green onions before serving.
Notes
If you prefer a lot of sauce, consider doubling the marinade ingredients as the juices reduce significantly during roasting. This recipe is naturally gluten-free (using tamari) and dairy-free.
