Crispy Peruvian-Style Chicken Wings with Green Sauce

Ingredients
- 2 lb Chicken wings (split into flats and drumettes)
- 2 tbsp Olive oil (for the marinade)
- 2 tbsp Soy sauce
- 0.25 cup Cilantro (fresh, chopped)
- 3 Garlic (cloves, minced)
- 1 tbsp White vinegar
- 1 tsp Smoked paprika
- 1 tsp Ground cumin
- 0.5 tsp Dried oregano
- 0.25 tsp Ground cayenne (adjust to taste)
- 0.5 cup Sour cream (for the sauce)
- 1 Jalapeño (seeded and chopped)
- 1 Garlic (clove, for the sauce)
- 0.5 cup Cilantro (fresh, for the sauce)
- 0.25 cup Cotija cheese (can substitute with Parmesan)
- 1 tbsp Lime juice (plus extra for serving)
- 1 tbsp Olive oil (for the sauce)
- 1 tsp Red wine vinegar
- Salt & black pepper (to taste)

In a large bowl or zip-top bag, combine the chicken wings with olive oil, soy sauce, chopped cilantro, minced garlic, white vinegar, smoked paprika, ground cumin, dried oregano, and ground cayenne.

Toss the wings thoroughly to ensure they are evenly coated in the marinade. For maximum flavor, let the wings marinate in the refrigerator overnight, or for at least 30 minutes.

Preheat your air fryer to 400°F (200°C).

Place the wings in the air fryer basket in a single layer, working in batches if necessary to avoid overcrowding.

Air fry the wings for 18-22 minutes, flipping halfway through, until they are golden brown and crispy. (Alternatively, you can bake or grill them).

While the wings are cooking, prepare the green sauce by combining the sour cream, jalapeño, garlic, cilantro, Cotija cheese, lime juice, olive oil, and red wine vinegar in a blender or food processor.

Notes
For a dairy-free version of the sauce, you can substitute the sour cream with a dairy-free alternative or a cashew-based cream. If you don't have an air fryer, you can bake these in a 425°F oven on a wire rack for about 40-45 minutes.
