  • 2 lb Chicken wings (split into flats and drumettes)
  • 2 tbsp Olive oil (for the marinade)
  • 2 tbsp Soy sauce
  • 0.25 cup Cilantro (fresh, chopped)
  • 3 Garlic (cloves, minced)
  • 1 tbsp White vinegar
  • 1 tsp Smoked paprika
  • 1 tsp Ground cumin
  • 0.5 tsp Dried oregano
  • 0.25 tsp Ground cayenne (adjust to taste)
  • 0.5 cup Sour cream (for the sauce)
  • 1 Jalapeño (seeded and chopped)
  • 1 Garlic (clove, for the sauce)
  • 0.5 cup Cilantro (fresh, for the sauce)
  • 0.25 cup Cotija cheese (can substitute with Parmesan)
  • 1 tbsp Lime juice (plus extra for serving)
  • 1 tbsp Olive oil (for the sauce)
  • 1 tsp Red wine vinegar
  • Salt & black pepper (to taste)

    In a large bowl or zip-top bag, combine the chicken wings with olive oil, soy sauce, chopped cilantro, minced garlic, white vinegar, smoked paprika, ground cumin, dried oregano, and ground cayenne.

    Toss the wings thoroughly to ensure they are evenly coated in the marinade. For maximum flavor, let the wings marinate in the refrigerator overnight, or for at least 30 minutes.

Notes
