Cilantro Lime Salmon with Avocado Salsa

Ingredients
- 4 Salmon fillets (approximately 6 oz each)
- 2 tbsp Olive oil (extra virgin)
- 2 tbsp Lime juice (fresh)
- 1 tsp Lime zest
- 0.25 cup Fresh cilantro (finely chopped)
- 1 tsp Smoked paprika
- 0.5 tsp Salt (or to taste)
- 0.25 tsp Black pepper (freshly ground)
- 2 Avocados (ripe, diced)
- 2 Tomatoes (roma or vine-ripened, seeded and chopped)
- 0.25 cup Red onion (finely chopped)
- 2 tbsp Additional cilantro (for the salsa)
- 1 Limes (juiced, for the salsa)

Preheat the oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greased aluminum foil.

In a small bowl, combine the olive oil, lime juice, lime zest, chopped cilantro, smoked paprika, salt, and black pepper. Mix well until the marinade is combined.

Place the salmon fillets on the prepared baking sheet. Pour the cilantro-lime mixture over each fillet, ensuring the tops are well coated.

Bake the salmon for 12 to 15 minutes, or until the fish flakes easily with a fork and reaches the desired level of doneness.

While the salmon is baking, prepare the avocado salsa. In a medium bowl, combine the diced avocados, chopped tomatoes, red onion, additional cilantro, and lime juice.

Season the salsa with salt and black pepper to taste. Toss gently so as not to mash the avocado pieces too much.

Once the salmon is ready, remove it from the oven. Serve each fillet warm topped with a generous portion of the fresh avocado salsa.
Notes
For best flavor, ensure the avocados are ripe but firm. If you prefer a spicy kick, you can add a finely chopped jalapeño to the avocado salsa.
