Cheese-Stuffed Potato Balls

Ingredients
- 300 g medium-starchy potatoes (peeled and cut into pieces)
- 100 g shredded Emmental (shredded)
- 2 tbsp cornstarch (cornstarch)
- 1 egg
- salt (to taste)
- pepper (to taste)

- 40 g Gouda cheese (block) (cut into pieces for filling)
- 100 g panko breadcrumbs (for breading)
- oil (for deep frying)
- 2 tbsp mayonnaise (for the dip)
- 1 tbsp sriracha (for the dip)
- 1 tbsp sweet chili sauce (for the dip)

Peel the potatoes and cut them into evenly sized pieces.

Place the potato pieces in a pot and cover with salted water. Bring to a boil and cook for approximately 20 minutes until tender.

Drain the potatoes and mash them thoroughly using a potato masher or press. Allow the mash to cool slightly.

Add the shredded Emmentaler cheese, cornstarch, egg, salt, pepper, and a pinch of nutmeg to the mashed potatoes. Mix until a uniform dough forms.

Cut the Gouda cheese into small cubes. Take a portion of the potato dough and wrap it around a piece of Gouda, rolling it into a ball. Repeat until all dough and cheese are used.

Place the formed potato balls in the refrigerator for at least 1 hour. This helps them hold their shape better during frying.

Roll each chilled potato ball in panko breadcrumbs until evenly coated on the outside.

Heat oil in a pot for deep frying. Test the temperature by inserting a wooden chopstick; if small bubbles form around it, the oil is ready.

Carefully place the balls in the hot oil and fry until they are golden brown all over. Remove and drain on paper towels.

Prepare the Boom Boom dip by whisking together the mayo, Sriracha, and sweet chili sauce in a small bowl. Serve alongside the hot potato balls.
Notes
If the dough is too sticky, you may need a little more starch, but chilling the dough for an hour is the most important step for stability. You can substitute the Gouda with any melting cheese you prefer.
