Honey Buffalo Chicken Wings

Ingredients
- 1.75 lb chicken wings (1.5–2 lbs)
- 1 tbsp neutral oil
- 1 packet sazon
- 2 tsp paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1.5 tsp chicken bouillon powder
- 0.25 cup buffalo sauce (for marinade)
- 0.125 cup pickle juice (1/8 cup)
- salt (to taste)
- black pepper (to taste)
- 1 cup cornstarch
- canola oil (for frying)
- 0.333 cup buffalo sauce (1/3 cup for sauce)
- 0.5 cup honey
- 2 tbsp butter
- 1 tbsp brown sugar
- salt (to taste)
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup buttermilk
- 1 packet ranch seasoning
- 0.25 cup fresh dill (finely chopped)
- 2 tbsp chives (chopped)
- 2 tsp garlic powder
- 1 tsp garlic paste
- salt (to taste)
- black pepper (to taste)

Pat the chicken wings completely dry with paper towels to ensure a crispy crust.

Add the wings to a large bowl with the neutral oil, sazon, paprika, garlic powder, onion powder, chicken bouillon, buffalo sauce, pickle juice, cornstarch, salt, and pepper.

Toss the wings well until they are evenly coated in the seasoning and cornstarch mixture.

Let the wings rest for 10–15 minutes to allow the coating to adhere.

Heat canola oil in a large pot or deep fryer to 350°F (175°C).

Fry the wings in batches for 8–10 minutes, flipping occasionally, until they are golden brown and the internal temperature reaches 165°F.

Drain the fried wings on a wire rack to keep them crispy.

In a saucepan over medium-low heat, combine the buffalo sauce, honey, butter, brown sugar, and a pinch of salt.

Stir the sauce until smooth and slightly thickened, then remove from heat.

Add the hot wings to a clean bowl, pour over the honey buffalo sauce, and toss until fully coated.

Whisk together the mayonnaise, sour cream, buttermilk, ranch seasoning, fresh dill, chives, garlic powder, garlic paste, salt, and pepper until smooth.

Chill the ranch in the refrigerator for at least 30 minutes before serving for the best flavor.
Notes
For the best results, ensure the wings are very dry before coating. Chilling the ranch allows the flavors of the fresh herbs and garlic to meld.
