Ingredients

  • 0.5 cabbage (shredded into thin strips)
  • 200 g pork or beef (cut into thin strips)
  • 1 tsp dark soy sauce (to color the meat)
  • 3 clove garlic (minced (part of 'The Big Three'))
  • 1 slice ginger (minced (part of 'The Big Three'))
  • 1 stalk green onion (chopped (part of 'The Big Three'))
  • salt (to taste)
  • 1 tbsp light soy sauce (for final seasoning)
  • 2 tbsp vegetable oil (for stir-frying)

Steps

    Shred the cabbage into thin strips and set aside.

    Heat the oil in a wok or large skillet over high heat. Add the meat and stir-fry until it changes color.

    Add the dark soy sauce to the meat for color and mix well.

    Add 'The Big Three' (minced garlic, ginger, and green onion) and stir-fry over high heat until fragrant.

    Add the shredded cabbage to the wok. Continue stir-frying over high heat until the cabbage begins to soften.

    Season with salt and light soy sauce.

    Quickly toss everything together over high heat to combine the flavors and serve immediately.

Notes

'The Big Three' in Chinese cooking generally refers to the combination of garlic, ginger, and green onion. The stir-frying technique requires very high heat and constant movement to maintain the cabbage's crunchy texture.
