Weights are estimates. Together, the ingredients weigh about 1.96 kg before cooking, which is about 325 g per serving.
Steps
Make the taco seasoning: Add the salt, black pepper, smoked paprika, garlic powder, onion powder, cumin, red chili powder, and oregano to a bowl. Mix until evenly combined.
Heat the clarified butter or oil in a skillet. Add the diced onion and sauté for about 1 minute, or until fragrant.
Add the ground beef and cook over medium heat until it changes color.
Add the minced garlic and stir to combine it with the beef.
Season with 1 tablespoon of the taco seasoning. Add the tomato paste and chipotles in adobo; stir and sauté for 2–3 minutes.
Taste the beef and add more salt if needed.
Pour in the warm water and cook for 8–10 minutes, or until the beef is fully cooked and the water has evaporated.
Make the crema: Add the mayonnaise, sour cream, buttermilk or water, chipotles in adobo, taco seasoning, lime juice, and dried parsley to a bowl.
Mix the crema until smooth and creamy.
Heat a little oil in a skillet over medium heat. Place a tortilla in the skillet and sprinkle shredded mozzarella over it.
Place a portion of beef on one side of the tortilla and fold it in half to close.
Cook until the tortilla is crispy and golden. Serve hot with salsa and the chipotle-lime crema.
Notes
The source does not specify which fat to choose between clarified butter and oil, nor does it give quantities for the frying oil or salsa for serving. It also does not specify how much beef to put in each tortilla or how long to cook each taco; cook until golden and crispy, as directed.
