Weights are estimates. Together, the ingredients weigh about 380 g before cooking, which is about 190 g per serving.

Steps

  1. Whisk the juice of 1 lime with the grated garlic, cumin, olive oil, and a good pinch of salt in a bowl.

  2. Add the trimmed flank steak and turn it to coat in the marinade. Leave it for 30 minutes, or refrigerate overnight.

  3. Heat a cast-iron skillet over high heat until smoking hot.

  4. Add the steak and sear for 3–4 minutes per side. For a strong crust, leave it undisturbed for the first 2 minutes on each side. Cook until deeply charred outside and 145°F (63 °C) in the thickest part.

  5. Transfer the steak to a board and rest it for 5 minutes, then cut it into cubes.

  6. Warm the cooked white rice and cauliflower rice together. Stir in a squeeze of lime and chopped cilantro.

  7. Pile the rice mixture on one side of each bowl and the steak on the other.

  8. Add pico de gallo, pickled red onion, crumbled cotija, and avocado. Serve with a lime wedge.

Notes

The source gives prep time as 10 minutes, cook time as 10 minutes, and total time as 10 minutes; the total appears inconsistent with the stated 30-minute marinade and 5-minute rest. A 30-minute marinade gives at least 45 minutes elapsed time, excluding prep and cooking; overnight marinating is also offered. The OCR is unclear on the cumin amount and cauliflower rice amount. For meal prep, keep the avocado whole, or squeeze lime over its cut side and slice it at lunch; the other components hold in the box for 3 days.
