Ingredients

  • 0.5 lb Flank steak (thinly sliced against the grain)
  • 1 tsp Cornstarch (for beef marinade)
  • 0.25 tsp Baking soda (to tenderize the beef)
  • 2 tbsp Soy sauce (divided for marinade and sauce)
  • 1 tbsp Dark soy sauce (for color)
  • 1 tbsp Oyster sauce (for the stir-fry sauce)
  • 1 lb Wide rice noodles (fresh Ho Fun noodles preferred)
  • 0.5 Onion (sliced)
  • 3 clove Garlic (minced)
  • 3 Scallions (cut into 2-inch lengths)
  • 2 cup Mung bean sprouts (rinsed and drained)
  • 3 tbsp Vegetable oil (for stir-frying)
  • Chili oil (for garnish)

Steps

    Place the thinly sliced beef in a bowl and marinate with a splash of soy sauce, cornstarch, and baking soda. The baking soda is essential for tenderizing the meat. Set aside for at least 15 minutes.

    In a small bowl, whisk together the remaining soy sauce, dark soy sauce, and oyster sauce to create the stir-fry sauce.

    Heat a wok or large skillet over high heat with a tablespoon of oil. Add the beef and stir-fry for about 1 minute until just browned but not fully cooked through. Remove the beef from the wok and set aside.

    Wipe out the wok if necessary and add more oil. Add the sliced onions and minced garlic, sautéing until fragrant.

    Add the wide rice noodles to the wok. If using fresh noodles that are stuck together, gently separate them beforehand.

    Pour the prepared sauce mixture over the noodles and toss to coat evenly.

    Return the beef to the wok along with the scallions and bean sprouts.

    Gently toss all ingredients together over high heat for another 1-2 minutes until the sprouts are slightly wilted and the noodles are heated through. Be careful not to break the noodles.

    Plate the dish and garnish with chili oil if desired.

Notes

Using fresh rice noodles (Ho Fun) is highly recommended for the best texture. If using dried noodles, rehydrate them according to package instructions before stir-frying. Dark soy sauce is used primarily for the deep mahogany color characteristic of this dish.
