Ingredients

  • 1 cup all-purpose flour
  • 0.5 cup cocoa powder (baking cocoa)
  • 0.5 cup brown sugar
  • 0.25 cup white granulated sugar (for the dough)
  • 1 tsp baking powder
  • 0.25 tsp baking soda
  • 0.5 tsp salt
  • 2 eggs (pre-mixed/whisked)
  • 0.25 cup vegetable oil
  • 2 tsp vanilla extract
  • 0.5 cup white granulated sugar (for rolling)
  • 0.5 cup powdered sugar (for rolling)

    Preheat your oven to 325°F (165°C).

    In a large bowl or stand mixer, combine the dry ingredients: 1 cup flour, 1/2 cup cocoa powder, 1/2 cup brown sugar, 1/4 cup white sugar, 1 teaspoon baking powder, 1/4 teaspoon baking soda, and 1/2 teaspoon salt.

    In a separate small container, pre-mix the 2 eggs to make them easier to incorporate.

    Add the wet ingredients (pre-mixed eggs, 1/4 cup oil, and 2 teaspoons vanilla) to the dry ingredients.

    Keep the mixer going until the dough comes together. Note that the recipe may seem too dry at first, but it will eventually form a wet, brownie-like batter; do not add extra liquid.

    Prepare two separate small bowls for rolling: one with 1/2 cup granulated sugar and one with 1/2 cup powdered sugar.

Notes

The dough is intentionally very wet and messy to work with, which results in a fudgy, brownie-like interior. If you don't have a cookie scoop, a spoon works just fine. The author recommends pre-mixing the eggs to help them incorporate into the thick dough more easily.
