Roasted Onion and Tomato Dip with Cream Cheese

Ingredients
- 1 onion (peeled and cut into wedges)
- 250 g cherry tomatoes
- 3 garlic cloves
- 2 tbsp cream cheese (large tablespoons)
- extra virgin olive oil (for roasting and garnishing)
- salt (to taste)
- pepper (to taste)
- fresh basil (for garnishing)
- flaky salt (for the finishing touch)

Preheat the oven to 180°C.

Place the peeled onion cut into wedges, the cherry tomatoes, and the 3 garlic cloves in a baking dish.

Drizzle with olive oil and season with salt.

Bake at 180°C for 30 to 40 minutes until the vegetables are golden brown and tender.

Transfer the roasted vegetables to a blender beaker or food processor.

Add the 2 large tablespoons of cream cheese and blend until a creamy consistency is achieved.

Taste and adjust salt and pepper if necessary.
