Low Cal, High Protein Peanut Butter Banana Bread
A clean, high-protein banana bread that uses Greek yogurt and protein powder for a macro-friendly treat. It features a peanut butter glaze and is best made in a narrow loaf pan for height.

Ingredients
- 350 g Overripe Bananas (about 3 large bananas, mashed)
- 170 g Nonfat Greek Yogurt (plain or vanilla)
- 1 Egg (medium)
- 120 ml Cashew or Almond Milk
- 60 g Oat Flour
- 60 g All Purpose Flour
- 96 g Granular Sugar Substitute (author used Swerve)
- 1.5 scoop Vanilla Whey/Casein Protein Powder (whey/casein blend is important for texture)
- 16 g PBFit Peanut Butter Powder
- 3 g Baking Soda
- 2 g Baking Powder
- 1 g Salt
- Peanut Butter Chips (to taste, optional mix-in)
- 48 g Peanut Butter (optional topping)
- 7 g Coconut Oil (melted, optional topping)

Preheat your oven to 350°F (175°C).

In a mixing bowl, combine the mashed bananas, nonfat Greek yogurt, egg, and cashew or almond milk. Mix thoroughly until well combined.

In a separate mixing bowl, whisk together the oat flour, all-purpose flour, sugar substitute, protein powder, peanut butter powder, baking soda, baking powder, and salt.

Add the dry ingredients to the wet ingredients. Mix until just combined, being careful not to over-beat the batter as it will affect the final texture.

If using peanut butter chips, gently fold them into the batter.

Prepare a loaf tin (ideally 4.5 inches wide) by lining it with parchment paper or coating it with cooking spray.

Pour the batter into the prepared loaf tin and bake at 350°F for 55 minutes to 1 hour. Remove from the oven as soon as it passes the toothpick test (a toothpick inserted into the center comes out clean).

Let the bread rest in the pan for 15 minutes.

While resting, prepare the optional topping by mixing the peanut butter and melted coconut oil until smooth. Drizzle or spread over the loaf.

Store the loaf in the fridge until the topping has hardened. Slice into 7-8 pieces and serve.
Notes
Using a whey/casein protein powder blend is important for the correct texture. A narrower loaf pan (4.5 inches) is recommended for taller slices. Macros provided by the author (140 Cals, 21.75g Net Carbs, 1.75g Fat, 11g Protein) do not include the optional mix-ins or topping.
